Rosehip Jam:  Rosehips or “fruit of the rose” are the seed heads left after wild roses have bloomed.  Rosehips produce a delicious sweet jam with a slight tang - and a beautiful red-orange color!  Rosehip Jam is extremely high in vitamin C. This jam is great when used on toast or step out of the box and try it on bison, duck and other meat dishes.  It is superb on turkey used in the place of cranberry sauce.
RHUBARB RELISH:  This relish or chutney is a perfect blend of onions and various spices. A superb condiment for poultry, pork or beef!  Rhubarb Relish is also excellent with wild game, hamburgers and meat loaf.
 
 
LILAC WHITE WINE JELLY: A delicious way to celebrate this much loved spring flower.  With a hint of lilac, a splash of white wine, and beautiful natural color. Lilac White Wine Jelly is a perfect way to enjoy spring - year round! Kick your day off right with a little on top your toast or bagel.  Fabulous when paired with pork roast.
GARLIC PESTO: The sky is the limit with this pesto.  Use it as a marinade or sauce on any type of meat including lamb and seafood.   Great as a garlic toast spread, for bread dipping, added to salad dressings, dips, soups or pasta for extra pizzazz.  Mix with sour cream and bacon bits to put over your perogies… yumm!
 

AVAILABLE WHEN IN SEASON:

Chanterelle Mushrooms: Tender but not crumbly. These mushrooms are called the “queen of the forest.”  Their flavor is saturated and stands up well to main ingredients in soups, sauces and stews.

Fiddleheads:  Found on the forest floor, these are the tender new shoots of the ostrich fern.  A crisp texture with a taste that has been described as nutty, earthy and somewhat like asparagus. Fiddleheads are a good source of vitamins A and C, niacin, magnesium, iron, potassium, zinc, and phosphorus.

Cattail Shoots: These are the young shoots pulled from the leafy part of the cattail.  They are a flavour combination of tender zucchini and cucumber. They retain their crunchiness!

COMING SOON:

Pickled Cossack’s Asparagus: These young shoots are picked at just the right time. They are processed within hours to make a delicious, unique treat for the pickle lover in your life.  Use as a garnish for martinis or caesars.  Could also be used as a conversation starter at your next dinner party.
