Chanterelle Mushrooms: Tender but not crumbly. These mushrooms are called the “queen of the forest.” Their flavor is saturated and stands up well to main ingredients in soups, sauces and stews.
Fiddleheads: Found on the forest floor, these are the tender new shoots of the ostrich fern. A crisp texture with a taste that has been described as nutty, earthy and somewhat like asparagus. Fiddleheads are a good source of vitamins A and C, niacin, magnesium, iron, potassium, zinc, and phosphorus.
Cattail Shoots: These are the young shoots pulled from the leafy part of the cattail. They are a flavour combination of tender zucchini and cucumber. They retain their crunchiness!

Pickled Cossack’s Asparagus: These young shoots are picked at just the right time. They are processed within hours to make a delicious, unique treat for the pickle lover in your life. Use as a garnish for martinis or caesars. Could also be used as a conversation starter at your next dinner party.
